The California Spirits Company - Craft Distilling in San Marcos

The California Spirits Company is a small, craft distillery in San Marcos, CA. It’s the only licensed and operating distillery in North County. Its flagship product, AVALON Silver Rum, is made from distilling a fermentation of molasses 6 times in a 100 gallon pot/column custom still on site. The unique mix of distiller’s grade molasses and yeast produces aromas of banana and caramel in the fermentation. This delicious flavor is cleaned in the still and only the purest reverse osmosis water is added to the product to bring the spirits to bottle proof.

Nestled into 2,000 sq. ft. of space, CalSpirits is a production facility that can produce over 7,000 bottles of rum in a single month. New innovations to the rum making process as well as a few new devices had to be invented in order to reach these levels of quality and production. CalSpirits is an excellent example of modern industry best-practices combined with the entrepreneurial spirits of craft workmanship.
